IN THE VINEYARDS
Conversing with the land
The vineyards are located within the viticultural zone of Dafnes, the Protected Designation of Origin (PDO), in the prefecture of Heraklion.
The privately owned vineyard amounts to 30 acres, which extend at an altitude of 400 – 500 meters. It is cultivated with organic preparations, while it is not fertilized. Most of the grapes after vinification are returned to the vineyard. The average age of the vineyards is 35 years.
We maintain long-term partnerships with local growers ensuring excellent raw material in every harvest. These vineyards are located in the most mountainous locations of the region and at an altitude of more than 450 meters to favor the highest acidity. These vines are cultivated with traditional techniques by the old winegrowers with whom we have been working all these years in order to obtain the best possible results, always in accordance with the philosophy of our winery.
Our top priority is to enhance the biodiversity and longevity of both our privately owned and cooperating vineyards.
All work is done manually, based on the particular characteristics of each year. We walk on the ground while pruning frequently during the growing season to ensure that our grapes have balance and the ideal components when they reach their physiological ripeness.
The soils are mainly limestone and barren. The roots are forced to penetrate deep in order to find water, thereby imparting characteristics to the fruit that later lead to mineral elements in the wine.
