Vineyard: Anhydrous, low yielding vineyard, located in Venerato in Malevizio of Heraklion.
Yield: 600-80 kg/ha
Climate: Mild winter, cool summer
Harvest: 5th to 15th of September
Vinification: Fermentation of free run juice at 15°C with selected yeasts.
Maturation: 4 months in tanks with batonnage, 4 months maturation in oak barrels, and at least 8 months in the bottle.
Total acidity 6.3gr/lit tartaric
